Gluten & Dairy Free Mac & Cheese

It’s always great when there’s a recipe that everyone enjoys even when you think it’s something they won’t. My family is not vegan and they don’t have to eat gluten or dairy free like me but this is a hit. So try it! Especially if you have PCOS this totally fits in with how you should be eating. Enjoy!

I needed a good dairy and gluten free Mac n Cheese that I could enjoy. One that the family would enjoy too. I think I created it.

Mac n Cheese

Box or Bag of Gluten Free Pasta cooked.

To make the sauce:

4 tablespoons of Coconut Oil or something similar. I used Avacado Oil yummy. Mix over low heat with two tablespoons of gf flour.

Once starting to boil add 1 1/2 cups Coconut or other dairy free milk substitute, salt & pepper.

Once about to boil again add 1 1/2 cups vegan cheese. I used Daiya Cheddar and make sure fully melted.

Once fully melted add drained macaroni and mix completely. Place in a 9×9 pan.

Topping

1 Cup GF Panko Bread Crumbs
2 Teaspoons of Garlic Olive Oil or EVOO
1 Teaspoon Oregano
Dashes of Salt & Pepper

Mix together and sprinkle on top of Mac n Cheese…
