I’ve had to get creative cooking being Gluten and Dairy Free. I know there’s others like me so here is dinner from tonight and maybe a dish you can try to enjoy a healthy and delicious dinner.
Roasted Onions & Tomatoes
Heat oven to 425
Cut up the onions and tomatoes you’d like to use.
Drizzle with extra virgin olive oil, smoked salt, garlic salt, and black pepper.
Bake for 20 minutes. Could be more or less, it’s up to how you’d like them.
Gluten Free / Dairy Free Chicken
Oven again at 425
Take 3 tablespoons of vegan butter and melt over low heat in a skillet.
Once melted add 2 cups of gf bread crumbs. I like the Ian’s brand. Mix together until lightly browned.
Once ready put in a bowl and mix with seasonings of your choice. Make another bowl with 3/4 cup gf flour and another bowl with a egg beaten and a dash of coconut milk mixed.
Take boneless skinless chicken tenders and…
Dip in gf flour… Then coat with egg mixture, and finally coat with breadcrumb mixture.
Once all ready bake for 20 plus minutes until cooked and lightly browned.
Together a yummy dinner. Enjoy!!
