Day 41 – Caprese Salad My Way – 37th Year Photo/Moi Challenge

I have the best toddler ever. He eats anything you give him. This being the way things are I knew a salad for dinner wasn’t going to be a bad thing.

Mondays are hard nights to plan what to cook. So I decided tonight to make a Caprese salad with a twist. You know, add more to it to make it a full on meal. This way the 12 year old vegetarian is happy too and I’m not making two dishes.

To make this salad it’s very easy:

Slice and grill some Eggplant.

Slice and stack the Tomato, Mozzeralla, and Avacado.

Once the Eggplant is done add it to the stack below the tomato and bam you have a yummy meal in minutes.

Try it or add some variety to a classic salad. I would hope like our family everyone would be willing to try it.
