I decided to make this pancake muffin recipe I’d seen gluten free because well gluten & I aren’t friends.
I realized quickly that I was out of the gluten free pancake mix so I did what any other person would do and I went online and found a DIY Pancake recipe.
I found that I would make four different kinds of pancake muffins:
- Dark Chocolate Chip – I didn’t get any 😦
- Blueberry
- Strawberry
- Turkey Bacon
Let it be known these were also sugar free other than the Dark Chocolate chip ones and the natural sugars in the Blueberry and Strawberry muffins. Surprisingly the Turkey Bacon ones were the best I think in part because of the salt used in the pancake mix.
