I was tired of not having anything during Halloween, Thanksgiving, Hanukkah, and with the Christmas season and being a family that celebrates Hanukkah and Christmas I wanted to make something I could enjoy. I took a chance and it worked. A bit dry but more frosting or a glass of milk (Coconut that is) could do the trick if you need it. I didn’t and I was shocked it came out yummy. Enjoy!!
Cookie Ingredients
3 1/2 Cups Gluten Free Flour
1 Tbs Baking Powder
1 Cup Vegan Butter
8oz Vegan Cream Cheese
1 Cup Truvia Sugar Blend or you can use 2 Cups of Sugar
1 Egg
1 Tsp Vanilla
Mix together, cover, and place in the fridge for at least 2 hours. Overnight may be best but 2 hours worked for me.
Heat oven to 350
Roll out to half inch thick. I used gluten free flour to help roll the dough easier.
Cut out shapes, place on non stick cookie pan, and bake for 10 minutes.
When cool mix powdered sugar with very little water until you get a frosting thickness you like. Spread over the cookie and then sprinkle with colored crystal sugar.
