Day 287 – Roasted Veggies – 37th Year Photo/Moi Challenge

Today I bring you four ways to roast veggies and make them yummy too.

Heat oven to 450 and after each veggie it says for how many minutes. These were all so good!!

Butternut Squash

Cut into two inch pieces.

Toss with 1/2 teaspoon dried rosemary before roasting.

40 minutes

Carrots

Slice into one inch slices.

After roasting toss with 1/2 teaspoon of pumpkin spice.

30 to 40 minutes

Onions

Cut into 12 wedges.

Before last five minutes remove, brush with mixture of 1 tablespoon brown sugar, 1 teaspoon cider vinegar, and then roast additional five minutes.

20 to 30 minutes

Potatoes

Cube the potatoes. I used baby potatoes.

After roasting sprinkle with 1/2 teaspoon of freshly grated orange peel.

45 minutes
