Brown Sugar Cinnamon Meringue

Yesterday I made these little gems. Super easy and would have been easier if I had a electric hand mixer but I used my vintage hand mixer and after 30 minutes my egg whites were fluffy. Trust me, electric mixer would equal a lot less time.

So these are my meringues…..

And this is what you will need:

4 egg whites (room temperature)
3/4 cup of lightly packed brown sugar (recipe called for a cup but seemed too much for me)
Pinch of salt
Two pinches of cinnamon (I added this to the recipe because of my love of cinnamon)

Preheat oven to 250
Beat egg whites until white peaks form.
Add 1 tablespoon at a time of brown sugar until each scoop is blended in. Add salt and cinnamon at some point. Doesn’t matter when.

Once all mixed use a Baggie and cut off a small corner. On a parchment paper lined cookie sheet make little mounds of uncooked meringue.

Place into the oven for 60 to 70 minutes and once complete let sit for one hour before removing.

Make sure they are placed in a air tight container and enjoy these little yummy treats.

My first attempt went well. I’d so use a electric mixer next time. Now that I’m dairy free because of PCOS I wanted a little treat and this was a great way to enjoy a dairy free and gluten free dessert.
