Roasted Vegetables

When you find that you have a limited amount of things you can eat you get creative. We were having friends over and I wanted something I could really enjoy that tasted good and this worked.

Preheat oven at 475 degrees

Get some vegetables you’d like to roast in the oven. I chose:

Brussel Sprouts
Yellow Squash
Green Squash
White Onions

Coat it all with EVOO, White Wine Vinegar, Smoked Salt, Pepper, and a bit of Italian seasonings. Use what works for you. I don’t believe in measuring this part out because sometimes its too much and other times its not so just coat your veggies.

When the oven is ready put them on a cookie sheet and stir them every ten minutes. It took 30 minutes for my veggies to be ready.

They were a hit and healthy too. Enjoy!
