This is a easy recipe for a quick dinner that I originally got from my sister in law but have changed over time.
We have Vegetarians and Non Vegetarians so I do a couple of dishes for dinner.
1 Box Quinoa Pasta (Don’t over cook)
Large Summer Squash Peeled and chopped up
Baby Carrots Chopped Up
Boneless Skinless Chicken Breast (Optional)
Organic Black Beans
Cubed Extra Firm Tofu (Optional)
Mix all together and add your own homemade dressing. Tonight and I didn’t measure it out but used Hot Sauce, Dijon Mustard, White Wine Vinegar, EVOO, and Cumin.
I let it sit in the fridge a couple of hours and it was healthy light dinner.
If my two year old enjoyed it you know everyone will.
