Gluten Free Beignets!!

I’ve been craving Beignets and I don’t know why but I know I needed some ASAP.  So, I went to Food Networks recipe by Paula Deen and swapped out regular flour for Gluten Free flour.  I also didn’t have shortening so I used a bit of butter.  They came out great!  It’s nice to know that just swapping a few things can turn something I can’t have into something I can.  Living with the PCOS and not having Gluten at all has been tough at times but I’m getting better at cooking for myself and not feeling deprived.  Unfortunately, or fortunately I can’t have a lot of sugar either so this really is a treat for me.

Now the downside to all of this is all the prep work that it took and clean up.  I think it’s much easier to have this prepared for me when I go to Down Town Disney with the kids.  They really should have a gluten free option because boy this was a lot of work but worth it because I’ve been craving it for about a month.
