Gluten Free Matzo Ball Soup….Take 2

In my attempt to enjoy Passover with the rest of my husbands family as he enjoys Easter with mine……

I’ve decided to make it my quest to create the perfect Gluten Free Matzo Ball soup.  Today was take 2.

I purchased some Gluten Free Matzo type crackers.  Overpriced at $12 a box but worth it so my daughter and I can enjoy some soup too.

Ingredients needed for my gluten free version are as follows:

  1. 4 Gluten Free Matzo that can be ground up (the best you can) to a one cup mixture.
  2. 2 tablespoons of Olive Oil (it asked for vegetable oil on the box of the original matzo ball soup.) Use what you like.
  3. 2 Eggs
  4. Garlic Powder & Mixture of Salt/Pepper

Mix the oil and eggs together using a fork and then add the matzo you have ground up. Once they’ve all been mixed together stick in your refrigerator for 15 minutes.

During this time get your soup ready.  I use water and then add a veggie soup mixture to make mine but use what you’d want to make soup.  Add vegetables to make it even more of a meal.

Once the 15 minutes is up and the soup is boiling roll the mixture into little balls and add to the soup mixture for 20 minutes (the box says) yet I say 30 minutes. You can turn it to a medium heat at this time.

It’s not your typical Matzo Ball soup mix but was very yummy still and a great alternative which will get even better each time I make it.
