Part of blogging for me is also sharing things I cook because I live gluten-free due to PCOS and stomach issues in general. The Hot Neighbor and I were kid-free for the week, and I made us this yummy dish. See below so you too can have this yummy meal!
Ingriedents
- Chicken Sausage (We used one with garlic and asiago cheese)
- Half of a Red Onion
- Apple (Use any kind that works for you)
- Butternut Squash (we used) or Sweet Potatoes
- Season to your liking
Instructions
- Heat your oven to 350 degrees.
- While the oven warms, chop your vegetables and arrange them in a baking dish. We thinly sliced the apples and onions and cubed the butternut squash.
- Add seasonings to your liking. I added smoked salt and garlic salt.
- Place your sausages on top of the vegetables whole. Do not cut up your sausage.
- Place in the oven on the center rack for 30 minutes.
- Take the dish out, mix up the vegetables, and turn the sausages over. Place back into the oven and cook for an additional 20-30 minutes.
- Remove carefully from the oven and dish up the plates.
- Enjoy!
