Chicken Sausage & Vegetables

Part of blogging for me is also sharing things I cook because I live gluten-free due to PCOS and stomach issues in general. The Hot Neighbor and I were kid-free for the week, and I made us this yummy dish. See below so you too can have this yummy meal!

Ingriedents

  • Chicken Sausage (We used one with garlic and asiago cheese)
  • Half of a Red Onion
  • Apple (Use any kind that works for you)
  • Butternut Squash (we used) or Sweet Potatoes
  • Season to your liking

Instructions

  • Heat your oven to 350 degrees.
  • While the oven warms, chop your vegetables and arrange them in a baking dish. We thinly sliced the apples and onions and cubed the butternut squash.
  • Add seasonings to your liking. I added smoked salt and garlic salt.
  • Place your sausages on top of the vegetables whole. Do not cut up your sausage.
  • Place in the oven on the center rack for 30 minutes.
  • Take the dish out, mix up the vegetables, and turn the sausages over. Place back into the oven and cook for an additional 20-30 minutes.
  • Remove carefully from the oven and dish up the plates.
  • Enjoy!
