Feast your eyes on the recipe for the best Peanut Butter cookie EVER…OK, so my kids really enjoy it and if you have to live gluten and or dairy free then you may also think they’re the best peanut butter cookie ever and so simple to make!
1 Cup Natural Peanut Butter (Creamy) 1/2 Cup Granulated Sugar 1/2 Cup Lightly Packed Brown Sugar 1 Tsp Organic Vanilla Extract 1 Egg (I used the equivalent in egg whites & you can use applesauce if you don’t eat eggs)
Preheat oven to 350 degrees.
Mix all ingredients in a bowl.
Once fully combined roll into little balls and place across a cookie sheet.
Take a fork and press down the cookies to make a X on the cookies.
Bake for 10 minutes, let cool, and enjoy.
Simply the best cookie ever and next time I plan on using Carob chips.
Sometimes it will take a pandemic to show us what’s really happening in our lives or where we need to be. Coming to this realization though can feel bad but can be filled, with hopefully so much growth. I will be doing a lot of work on me this upcoming week. I’ve found out some things that show me I need to do more work. More will be revealed.
I’m grateful like yesterday and today my kids don’t need to see how I’m feeling. I’m present for them and that’s what matters for the two of them. They go back to their fathers tonight so I can have a night to be sad if I choose to.
I’ve done good though being good to my body with food. Still no gluten. Still eating healthy. Just for today. So today I leave you with a photo of my yummy and healthy egg frittata with avocados from a friends tree that finally ripened. Until tomorrow.
Yesterday was a so/so day which is better than a bad day. Yes? Yes. I wasn’t able to work my real job but I was done stressing with the boy needing attention too and throw in I had class online from 9 am to 12:20 pm it was a packed morning to begin with.
Highlights of the day:
I made gluten free chocolate chip cookies and between 6 people they were all gone at the end of the day.
I completed my 8 week class of Anthro 101. Completed it with a B. Go me!
I was reminded again my worth and why I’m working so hard to better my kids and me.
I took naps with my littles.
Stuck to Gluten Free eating.
So, yesterday was better than the day before and I know some of our days are good and others aren’t. This is a brand new normal for us all. I’m hoping today is even better. Until tomorrow.
