Day 5 – Challenge Moi

I’m doing this thing, you know a plan to lose weight. I began a Holiday Sleigh Challenge and today was the first day. So, today I ate right, drank 100 oz of water, did some Yoga, and did the first day of this challenge.

I realized I’m not good at groups but the woman I’m working with I’m holding myself accountable with her. I met all my marks for today. I will meet them for tomorrow as well. I won’t win the challenge because I’m not doing as suggested by posting in the group BUT I’m winning within my own little challenge to be good to me.

I have a hard time realizing I’m worthy of good and that includes worthy of goodness for my body.

I’ll follow up on this as the challenge goes on and at the end I’ll post my victory! Now I have to finish so I can say I did it!

Day 4 ~ Disneyland when you’re broke

Today we kicked off the holiday season with a trip to Disneyland. This moms hours were cut at work so instead of spending a ton on food or toys that never get used I packed us all lunches and we had a great morning and afternoon at the magic kingdom. We are pass holders and there’s no way around that so we can find ways to save and believe it or not, packing your own meals is a huge money saver.

Quinoa Enchilada Casserole ~ Day 3

Today I bring you a vegetarian dish on my path to a more plant based diet.

Quinoa Enchilada Casserole

Ingredients:

2 cups cooked Quinoa

1 can black beans rinsed

2 cans green enchilada sauce (10 oz cans)

1 can roasted corn kernels

3 oz chopped green chili’s

1.5 cups of cheddar and mozzarella (1/2 in mixture and 1/2 on top)

How to:

Put all ingredients into a cooking pan and bake at 375 for 15 minutes or until the cheese is well melted on top.

Enjoy & save some for lunches throughout the week.
